Sun-dried Tomato Hummus



If you are anything like me and love dips and crackers, this tasty, homemade hummus is a great addition to any pre-dinner nibbles plate or even just a healthy afternoon snack! It’s packed full of protein and fibre and is much kinder on the waistline than your average dip!

–       2 tins chic peas (drained and rinsed)

–       1 clove garlic (crushed)

–       1 tbsn olive oil

–       1 tbsn tahini paste

–       juice of 1 lemon

–       pinch salt and pepper

–       handful of sun-dried tomatoes

–       roughly ½ cup veggie stock


Place all ingredients in a food processor except the stock. Start the food processor and then slowly add the stock until the mixture reaches the consistency you are after and you’re all done!

Easy huh?!
