Healthy Thai Beef Salad


Feeling the heat and don’t feel like slaving over a hot stove for hours just to get dinner on the table? Why not try my easy thai beef salad recipe! It’s fresh, zingy and perfect for those balmy summer nights!

THAI BEEF SALAD (serves 4)

The salad:

–       ½ punnet of baby spinach leaves and ½ punnet mixed leaves or roquette

–       good handful each of fresh beans and snow peas

–       ¼ large red capsicum and 1/4 large yellow capsicum

–       x1 small Lebanese cucumber

–       2/3 punnet of cherry tomatoes (halved)

–       1 ripe mango

–       ½ red onion (thinly sliced)

–       handful of roasted cashews/peanuts (chopped)

–       ¼ packet of vermicelli rice noodles

The dressing:

–       1 clove garlic (crushed)

–       1 tspn fresh grated ginger

–       juice of 1-2 limes (probably just one if they’re juicey!)

–       1 tbsn light soy sauce

–       2 tspn sesame oilHealthy Thai Beef Salad

–       1 tspn fish sauce

–       x1 large fresh/dried red chilli (chopped)

Beef Marinade: (optional)

–       500g beef rib fillet cut into 4 thick slices)

–       1 clove garlic (crushed)

–       1 tspn fresh grated garlic

–       splash of light soy sauce

–       ½ a small red chilli (finely chopped) or pinch of dried chilli flakes

–       ½ tspn honey

Ok so this recipe is SUPER simple!

  1. Firstly, turn on your BBQ if you are planning to cook your meat on one, then mix all your beef marinade ingredients together and add your meat to the mixture covering it well. (this can even be done a few hours before if you have time!)
  2. Secondly, place your noodles in a bowl, cover with boiling water and leave to cook for 5-10 mins. When they are cooked run them under some cold water in a drainer and then leave to drain while you get cracking on the rest of the salad!
  3. For the dressing add all ingredients to a jar with a lid and shake well to combine.
  4. As for the salad, wash all your veggies before cutting them and then add them all to a large salad bowl, leaving the mango til last.
  5. Cook your meat on the BBQ or a hot frying pan to your liking. (if you like your steak rare to medium rare 3-5 mins should do the trick!)
  6. Leave the meat to sit for 5 mins then add to the salad along with the noodles.
  7. Give your dressing another shake before pouring onto the salad and then finally add your chopped cashews or peanuts to the top.
  8. Now sit down and enjoy!
